Whisk the dry ingredients.
Rub lemon zest in the sugar.
Beat eggs until light and fluffy. Add sugar and oil and beat again.
Add buttermilk, lemon juice and vanilla extract. Beat again.
Add grated squeezed zucchini into the batter.
Fold in the dry ingredients into the wet ingredients.
Pour the batter in the prepared loaf pan and bake.
